Merry Christmas everyone!!! Here's a little something I whipped up last night and thought I'd share with you all.
These are simply divine and would be a big hit as gifts or just for the holidays!
They are especially delightful with tea!
Lavender Rosemary Shortbread Cookies
1 cup butter softened and creamed in a mixing bowl
1/2 cup powdered sugar add slowly to butter, cream well
Mix in separate bowl
2 cups white flour
1/4 tea. salt
1/2 tea. Lavender buds
1 tea. Rosemary leaves (freshly minced)
(a delicious substitute for the Lavender/Rosemary would be vanilla bean)
Add slowly to butter/sugar mixture
Knead until a ball forms
Roll out to 1/4 inch thick and cup using what ever cookie shape desired.
Bake at 350 degrees for 16 minutes or until the edges are light golden brown. Watch closely in the last minutes to keep from over cooking.
Makes about 2 dozen cookies.
Let cool and glaze with a light powdered sugar glaze.
Lavender Glaze
1 cup powdered sugar
1/4 tea. vanilla
A pinch of lavender buds
3 T. water
Mix in blender until it reaches a very smooth "runny" consistency.
Pour over cooled cookies.
Let set and enjoy!
